Classic Tomato Soup and Grilled Cheese Recipe
Ingredients:
2 tablespoons of butter
2 cloves garlic, crushed
2 tablespoons of all-purpose flour
4 cups chicken or vegetable broth
1 28 oz. can of whole peeled tomatoes, drained and coarsely chopped
1 teaspoon of dried oregano
1/2 teaspoon fresh ground black pepper
Salt to taste
8 slices of your favorite cheese (Cheddar is classic)
8 slices of fresh bread or thick cut artisanal bread
For the Tomato Soup:
In a large pot, melt the butter over medium heat. Once melted, add the garlic and cook for about a minute until fragrant.
Add the flour and stir continuously for another 3 minutes until it turns golden in color. This will create a roux which will help thicken your tomato soup later on!
Slowly pour in the chicken or vegetable broth while continuing to stir until it is completely incorporated into the roux.
Increase heat to high and bring the mixture to a boil, stirring constantly for about 5 minutes so that everything mixes together evenly without any lumps forming due to the flour in the roux.
Reduce heat back down to medium and add in your cans of chopped tomatoes along with oregano, black pepper and salt (to taste). Stir everything together slowly and let it simmer uncovered for 25 minutes – stirring occasionally – until sauce has reduced by half and is slightly thickened in consistency.
Once done cooking, blend soup using an immersion blender or regular blender until smooth desired texture is achieved (you can also leave it chunky if you prefer). Pour soup back into pot if you used a regular blender before serving with grilled cheese sandwiches!
For The Grilled Cheese Sandwiches:
Preheat oven to 350°F (176°C) as well as prepare two baking sheets with parchment paper or foil sprayed lightly with nonstick cooking spray.
On one side of each slice of bread, layer two slices of cheese on top before topping off with remaining piece of bread for each sandwich – creating four sandwiches total (your choice of cheese works best!).
Place prepared sandwiches onto baking sheets before transferring into preheated oven for 10–12 minutes until cheese has melted though and both sides are lightly browned to perfection!
Serve immediately with steaming hot bowl of tomato soup alongside for dipping! Enjoy!
